Potato Peeling Trick From Dawn Wells of Gilligan’s Island (Weekend Video Spotlight)

Weekend Video SpotlightEver needed to peel a lot of potatoes in a hurry and you couldn’t find (or didn’t feel like using) your potato peeler?

In the short video below, Dawn Wells, the former star of the classic TV series Gilligan’s Island (she played Mary Ann) will show you how to quickly remove the skin from a lot of potatoes using a pot of boiling water and a bowl of ice water.

Using a potato peeler to peel the skin from a large batch of potatoes can be a bit tedious, so this method is a nice change when making such dishes as homemade mashed potatoes or potato salad.

Salmon Fish Sticks With Pimento-Caper Sauce Recipe (Fish For Friday Recipe)

Below is a delightful recipe for Salmon Fish Sticks With Pimento-Caper Sauce from the folks at Seattle Food Geek that will help you get ready to become a happy sufferer of Spring fever.

Ingredients for the Salmon Fish Sticks:

1 1/2 lbs. center-cut salmon fillet, skin removed
1 cup flour
1 tsp. paprika
1/2 tsp. baking soda
1 tsp. fresh thyme, finely chopped
1 tsp. kosher salt
3 cranks freshly ground black pepper
1/3 cup light beer
1 cup panko (Japanese breadcrumbs)
1 qt. safflower oil (or vegetable oil) for frying

Ingredients for the Dipping Sauce:

1 tbsp. pimentos (and about 1/2 tsp. of the liquid they’re stored in)
1 tbsp. capers
4 tbsp. mayonnaise
1 tsp. lemon juice

Ingredients for the Slaw:

1 cup red cabbage, finely shaved
2 large carrots
2 tbsp. mayonnaise
1 tbsp. champagne vinegar
1 tbsp. cilantro, finely chopped
sea salt and pepper to taste
