This week’s recipe for Spicy Mojito Mahi Mahi, features the goodness of lime juice, rum, and mint…just the seafood dish to serve when you want to capture the mellow, relaxed feeling of Summer’s long (and much missed) days.

Made with Mahi Mahi, you might also find this fish labeled as Mahi, Dorado, Dolphinfish, or (gasp) Dolphin. But not to worry. Mahi Mahi is no relation to the similarly named Dolphins we all know and love.
