
It’s soup season, the perfect time for me to share a little known fact about soup; sometimes soup gets desperately lonely.
After all, how would you feel if the only occasion many people thought about you was when it was cold out and they needed you to warm them up, or they were sick and relied on you to nurse them back to health?
Imagine if the rest of the time you were confined in a tight can in a dark little cabinet or were sitting unmade in a dusty cookbook?
You’d be full of bottomless despair, that’s what!
However, hope is on the (not so bleak) horizon. Whether your soup is an elegantly thin consomme or a thick and hearty soup that’s a handful of barley away from being called stew there’s a simple solution. Serve a sandwich so your soup will have a trusty sidekick for the journey down the ole alimentary trail.
Below is a delicious recipe for Southern Style Crab Grilled Cheese Melt Sandwich that I created for National Grilled Cheese Month. A natural companion for just about any robustly flavored soup, this easy gourmet grilled cheese sandwich just might save the day!
Your soup will thank you…after all, even Italian Wedding Soup sometimes gets lonely!

Ingredients:
6 oz can crabmeat, well drained
1/3 cup finely diced Hungarian pepper (See Cook’s Notes)
2 green onions (tops only), minced
1 stalk celery, finely diced
3 Tbsp mayonnaise
1 tsp pepper vinegar (see Cook’s Notes)
1/4 tsp black pepper
4 thick slices light-textured, grainy bread (I used a cracked wheat Italian loaf)
Butter for spreading
Paprika for dusting
6 oz shredded sharp cheddar cheese
