
An excellent source of antioxidants, spinach is a delicious superfood with a starring role in many great soup, salad, vegetarian lasagna, omelet, and spinach dip recipes.
Alas, the old Popeye the Sailor Man cartoons had it wrong when it implied that spinach was an especially high iron food. However, even terrible old Bluto would have to admit that spinach is high in Vitamin A, Vitamin C, Vitamin E, and many other nutrients.
(If not, then perhaps Popeye could serve him some spinach salad with a nice Olive Oyl…er—olive oil dressing to help him see the light.)
