
In the years since Thomas Jefferson brought the first ice cream recipe to America, ice cream has become an important part of American summertime celebrations.
This make ahead recipe for Easy Chocolate Cherry Cordial Ice Cream Cake is a fun way to learn how to make your own custom ice cream cakes for summer parties, birthdays, and other special occasions.
Depending on the ingredients you choose, making your own homemade ice cream cakes can save you a little money entertaining, while allowing you the option of customizing the flavors to your heart’s desire.
To make the cake, just place your favorite flavor of ice cream in a bowl (in the video, Betty of Betty’s Kitchen uses vanilla) and let it melt enough so you can easily mix your favorite ingredients into it by hand.
(Don’t let the ice cream melt completely; ideally you want more of a mashed potato texture than a soup texture for this.)
In the video, Betty mixes chopped maraschino cherries, chopped pecans, and chunks of Hershey’s chocolate into the ice cream; however fresh cherries, any chopped nuts (I vote for hazelnuts), and your favorite brand of chocolate bar would work just as well.
Once you’ve mixed all the ingredients completely into your softened ice cream, just pour the ice cream mixture into a Springform pan, cover the top with foil or plastic, and freeze it for at least 7-8 hours until the ice cream is hard.
(For best results, set up your cake overnight to freeze in your refrigerator so the ice cream will be firm enough to easily cut and serve to your guests.)
The benefit of using a Springform pan for this is that it makes it very easy for you to transfer your ice cream cake to a large dish or platter when it’s time for dessert.
After you’ve placed your ice cream cake on your serving dish, you can serve it as is, or decorate it with whipped cream or any topping you like.
