
If you’re a regular reader of Hugging the Coast, you might have noticed that I’m more than a little fond of the food and culture of New Orleans.
With such dishes such as jambalaya, gumbo, etouffee, turducken, dirty rice, po’ boys, muffulettas, and bananas Foster, is it any wonder?
And did I mention beignets? Warm, powdered, sugar topped pastries of deep fried goodness, New Orleans’ Cafe Du Monde has been filling happy bellies with them since 1862.
Here’s a delicious fruit dessert recipe for Apple Beignets With Butter-Rum Caramel Sauce from the folks at Ezra Pound Cake.
Based on a recipe by Lillian Chou that appeared in Gourmet, and inspired by the flavors of New Orleans, this beignet recipe is a sweet love letter to The Crescent City.

Ingredients For the Butter Rum Sauce:
1 cup sugar
3 tablespoons unsalted butter, cut into pieces
1/3 cup water
1/4 cup dark rum
1/2 teaspoon cider vinegar
1/4 cup heavy cream
Ingredients for the Beignets:
About 8 cups vegetable oil, divided
2 Golden Delicious apples
1 3/4 cups self-rising cake flour, divided
1 large egg
3/4 cup sparkling apple cider
confectioner’s sugar for dusting
