Also known as dolphin fish (but no relation to the majestic dolphin), mahi mahi builds up a very tasty crust when you cook it outdoors on your BBQ grill.
Inspired by a recipe by Bobby Flay, here’s a delicious recipe for Grilled Chipotle Mahi Mahi With Red Pepper and Cilantro Pesto from the folks at Cookin’ Canuck.

Ingredients for the Pesto:
2 roasted red peppers, chopped (how to roast your own peppers)
3 tbsp slivered almonds, toasted
1 garlic clove, chopped
1/3 cup chopped cilantro
3 tbsp grated Parmesan cheese
1 1/2 tsp freshly-squeezed lime juice
1/4 cup extra-virgin olive oil
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper
Ingredients for the Mahi Mahi:
2 tsp (packed) brown sugar
1 1/2 tsp ground cumin
1 tsp kosher salt
1 tsp freshly ground black pepper
1/8 tsp chipotle chile powder
4 6-oz. mahi mahi fillets
4 tsp olive oil
