If you love grilling outdoors on your BBQ grill (or indoors on rainy days using a grill pan), it’s hard to find a more versatile side dish than this Grilled Pineapple Salsa from the folks at Herbivoracious.
You can make this as a naturally sunshine sweet topping for tacos and burgers or as a salsa for tortilla chips, celery sticks, or crackers. Or let it cool off and mix it into your favorite tuna, chicken, or green salad to add spice to any picnic or party.
Even better, this dish is also gluten free and vegan friendly making it an easy choice for special events.
1/2 fresh pineapple, sliced into 3/8″ thick planks (see above)
canola oil for grilling
juice of one lime
2 tablespoons minced shallot
1/4 to 1 jalapeno, depending on your heat preference, seeded and minced
