To set sail for Margaritaville, you just have to relax, kick back with a cool drink, and let the sun’s embracing warmth flow right through you without a care in the world.
This delicious fruit dessert recipe for Florida Key Lime Cheesecake Bars from the folks at Modern Comfort Food is a great way to let your taste buds in on the mellow fun.
With Father’s Day just around the corner, I know more than a few fathers who would prefer to make the holiday a “No Tie Zone” and enjoy the easy goodness of these Florida Key Lime Cheesecake Bars instead.

Ingredients:
3/4 cup plain graham cracker crumbs (approximately 6 graham crackers)
1/2 cup unsalted, sliced almonds
A dash of ground cinnamon
3 tablespoons melted butter
1 14-ounce can sweetened, condensed milk
8 ounces cream cheese (or American Neufchatel cheese), at room temperature
2 raw egg yolks
9 tablespoons (1/2 cup plus 1 tablespoon) fresh or bottled key lime juice (if the latter, the Nellie & Joe’s brand is particularly good)
(optional topping) 1/4 cup unsalted, sliced almonds tossed with 1 teaspoon confectioner’s sugar
