This week’s Fish For Friday Recipe for Baked Coconut Shrimp With Avocado Dressing from the folks at Cinnamon Spice & Everything Nice is as versatile as it is delicious.
You can serve it in a taco stuffed with homemade cole slaw (if you’ve ever had Baja Fish Tacos, you know just how good this is) or on top of your favorite salad as an exciting counterpoint to the leafy greens below.
The Avocado Buttermilk Dressing that’s part of this dish is so good, I’m betting that after you make it the first time, you’ll be drizzling it on your salads, burgers, and sandwiches for a long time to come.
Ingredients:
1 pound medium or large Shrimp, deveined and tails off (you can see how to easily peel and devein shrimp here)
1/4 cup All-Purpose Flour
3/4 cup shredded Coconut, unsweetened
1/3 cup Bread Crumbs or Panko Crumbs
2 Eggs
2 tablespoons Water
Avocado Buttermilk Dressing Ingredients:
3/4 cup Milk or Buttermilk
1/2 teaspoon White Vinegar
1/2 Lime, juiced
1 Avocado
1/2 cup Sour Cream
2 tablespoons Fresh Cilantro or Parsley, chopped
1/2 teaspoon Sea or Kosher Salt, plus more to taste
