The 2010 James Beard Awards were announced this week, so I thought it was the perfect time to share a recipe from the inspiration for the JBAs; James Beard himself.
Here’s an easy recipe for James Beard’s Richly Flavored Garlic Soup from the folks at Kitchenography. This recipe originally appeared in his book, Beard on Food.

Ingredients:
3 tablespoons chicken, goose, or pork fat
30 peeled garlic cloves (or more or fewer)
6 to 8 cups chicken stock
Salt and pepper
Nutmeg
4 or 5 egg yolks
3 to 4 tablespoons olive oil
slices of bread, toasted until crisp
