Ingredients for the Tomatillo Sauce:
8 to 9 medium tomatillos, husked and rinsed
1 jalapeno pepper, stemmed
3 garlic cloves, unpeeled
4 tsp olive oil, divided
1/2 large white onion, cut into 1/4-inch dice
1 1/2 cups chicken broth
Ingredients for the Slaw:
2 cups thinly sliced red cabbage
1/4 cup chopped cilantro
2 tsp fresh lime juice
2 tsp honey
Pinch of kosher salt
8 corn tortillas
Ingredients for the Shrimp:
24 large shrimp, peeled and deveined
1/4 cup canola oil
3/4 tsp ground coriander
3/4 tsp ground cumin
1 tsp chile powder
1/2 tsp kosher salt
3/4 cup crumbled cotija cheese
