
When you’re in the mood for some fresh crusty bread do you end up either baking or buying so much bread that later on you have no idea how you’re going to eat it all?
The solution to this vexing problem is to make this easy and delicious recipe for Tuscan Bread and Tomato Salad from David Lebovitz’s excellent food blog.
The salad recipe was adapted from his book, The Sweet Life in Paris where he shares his experiences enjoying the food and culture of the City of Lights.
Also known as panzanella, this hearty country bread tomato salad recipe is equally wonderful to serve at picnics and cookouts…the perfect way to celebrate these much awaited longer, warmer days.

Tuscan Bread and Tomato Salad Recipe Ingredients:
4 cups torn pieces of hearty, country-style bread (approximately 1-inch/3 cm pieces)
1 teaspoon Dijon mustard
1 1/4 teaspoon sea salt
lots of freshly ground pepper
2-3 cloves garlic, peeled and finely minced
3 tablespoons red wine vinegar
1 red onion, diced
3/4 cup best-quality olive oil
8 medium tomatoes (1 1/2 pounds/750 grams)
1 large cucumber, peeled, halved, and seeds scraped away
3/4 cup pitted black olives, preferably kalamata
1 cup packed (80 grams) coarsely chopped mixed fresh basil, mint, and flat-leaf parsley
(Note: I never measure herbs, so feel free to use lots and lots. The more the better!)
1/2 pound (250 grams) feta cheese
