Slow and easy. Two words that can sometimes be almost imposible to imagine together after a hectic week of work, household errands, and (in many parts of the country) truly awful weather.
Luckily, spring weather is coming, and with it a sense of renewal; a chance to finally recover a much needed sense of grace and ease.
Here’s a recipe for Anthony Bourdain’s Slow and Easy Mushroom Soup from the folks at Serious Eats which has been nominated for a 2010 James Beard Award which will help remind you what it was like to take things a bit easier.

6 tablespoons butter
1 onion, thinly sliced
12 ounces button mushrooms, halved
4 cups chicken stock
1 sprig parsley
2 ounces sherry
salt and pepper
