Unlike its more common cousins spinach and lettuce salad, cabbage salad doesn’t often get its due. That’s a shame, because cabbage is surprisingly high in Vitamin C as well as a very versatile ingredient to keep on hand.
Here’s a delicious cabbage salad that works either as a sophisticated, refreshing side dish or works as a meal. It’s also a great way to use up any leftover cooked chicken but it would also be wonderful served with shrimp.
Here’s a delicious recipe for Thai Cabbage Salad With Spicy Ginger Dressing from the folks at The Nourishing Gourmet. This is one beautiful looking salad; one that will please your eye at least as much as your palate.

Ingredients for the Salad:
1/2 head of Napa Cabbage, shredded
2 cups chopped, cooked chicken or seafood
2 bell peppers (red, yellow, or orange) cut into matchsticks
2 large carrots cut into matchsticks
1 bunch green onions, thinly sliced on the diagonal
1 cup mung bean sprouts
enoki or other fresh sliced mushrooms (optional)
1 cup roasted macadamia nuts, finely chopped
1 cup chopped cilantro leaves
Ingredients for the Salad Dressing:
3/4 cup seasoned rice wine vinegar
1 cup organic cold pressed sesame oil
1/4 cup soy or tamari sauce (The Nourishing Gourmet Blog suggests Nama Shoyu soy sauce or San-J wheat free tamari)
Juice of one lime
2 tablespoons minced garlic
4 tablespoons microplaned fresh or frozen ginger
1 teaspoon red pepper flakes
1 jalapeno pepper, seeded and finely diced
