Here’s a delicious party friendly appetizer recipe for Salt Crusted Fingerling Potatoes from Mark Bittman’s food blog that is rather like an upscale version of those lovely salt potatoes that are so popular in the Rochester and Syracuse, New York Area.
Adapted from a recipe by James Beard Award winner Jose Andres, this potato dish is as easy to make as it is memorable.

Ingredients:
1 pound fingerling potatoes, washed
3 cups water
1/2 cup Kosher salt
2 garlic cloves, skins on
1 cup Italian parsley, washed, leaves only
1 cup cilantro, washed, leaves only
1/2 cup olive oil
1/4 teaspoon black pepper
