This week’s recipe brings back happy memories of eating bowl after bowl of comforting soup at Moosewood Restaurant, the tiny eatery in Ithaca, NY that spawned a vegetarian cookbook empire that’s still going strong.
This is one of Moosewood’s most popular and delicious soups, a soup so good that even your non-vegetarian friends may end up begging you for more (and more).
2 cups chopped onion
1 Tablespoon vegetable oil
1/2 tsp cayenne or other ground chiles
1 tsp grated peeled fresh ginger
1 cup chopped carrots
2 cups chopped sweet potatoes
4 cups vegetable stock or water
2 cups tomato juice
1 cup smooth peanut butter
1 Tablespoon sugar
chopped scallions, for garnish
chopped roasted peanuts, for garnish
