5 Tbsp unsalted butter
1 medium onion, chopped finely
1 1/2 cups uncooked Arborio risotto
1 Tbsp fresh Thyme leaves separated from stems
1 cup canned pumpkin purée
1/4 tsp freshly ground nutmeg
1 tsp salt
pepper
3-4 cups chicken stock
1/2 cup grated Parmesan cheese
1 clove garlic, crushed
1/2 lb Bay Scallops
