Here’s a wonderfully delicious recipe for Salmon and Corn Cakes from the folks at White on Rice Couple.

Ingredients:
1 lb Cooked Salmon
1/2 c Cooked Fresh Corn
1/4 c Shallots, diced medium
3 T Italian Parsley, finely chopped
1 Egg, beaten
3 T unsalted Butter, melted
1 T Fresh Ginger, grated
1 t Paprika
1 t Soy Sauce
1 t Sea Salt
1/2 c Fresh Bread Crumbs
oil for frying
lemon wedges
