These salads look beautiful. I, like Kalyn, am quite the mayo lover. I see no need to exercise temperance where mayo is concerned. Egg yolks are fantastically nutrient dense, and if you’re using a good quality oil, the fat is actually really good for you!

I actually prefer salads with vinegars. So many possibilities with rice vinegar, seasoned vinegars, balsamic vinegars, etc. Spoilage isn’t as much of a concern. Can spare the calories too.
