Here’s a delicious recipe for Cornmeal Crusted Soft Shell Crab Po’ Boys from the folks at We Are Never Full.

Ingredients:
1 fresh french baguette - 12 inches long
3 to 4 soft shell crabs (depending on size)
1 cup of flour
2 eggs, beaten
1 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Garnish and Toppings: sliced tomatoes, sliced pickle, lettuce, creole mustard (see step #4 below for recipe) and mayonnaise
Enough corn or veggie oil to deep fry
