Here’s a delightful recipe for Grilled Tilapia with Basil-Chive Butter and Parmesan Steak Fries from the folks at Technicolor Kitchen.
For the Tilapia:
1 ½ cups (loosely packed) fresh basil leaves
4 tablespoons chopped chives
8 tablespoons (½ cup-112g) unsalted butter, room temperature
1 teaspoon grated lemon zest
6 x 170g (6-ounce) Tilapia fillets
extra virgin olive oil
For the Steak Fries:
3 large egg whites – I think 2 would be enough
coarse salt and freshly ground black pepper
3 baking potatoes, 220 to 280g (8-10 ounces) each
1 ¼ cups (125g) grated Parmesan cheese
