Got leftovers? Here’s an easy, tasty breakfast dish for the insatiable Mac & Cheese addict that lurks inside so many of us. Start your morning right – with Macaroni & Cheese!

Ingredients:
2 Tbsp butter or vegetable oil
3 cups leftover cooked elbow or other macaroni
5 eggs
1 Tbsp milk
1/4 tsp salt (or less is using a salty cheese)
Pinch of white pepper
Pinch of onion powder (optional)
4 oz grated Cheddar cheese, divided (Pepper Jack or Muenster would also be good)
1/4 cup unflavored bread crumbs
Optional Add-Ins: chopped onions, bell peppers, or jalapenos; crumbled bacon, cooked sausage, or diced ham; leftover shredded roast chicken or turkey.
PREPARATION:
Melt the butter in a 10 - 12 inch non-stick skillet over medium heat. Stir the macaroni in the butter and let warm (Mix in any Optional Add-Ins now).
Beat the eggs with the milk, salt, and pepper until thoroughly blended. Set aside about 1/4 cup of the grated cheese and stir the remainder into the eggs. Pour the egg/cheese mixture over the macaroni. Gently stir to blend evenly.
Set the oven to Broil. Allow the eggs to cook on the stove top (don’t stir them) until the edges are set. Sprinkle the reserved cheese and the bread crumbs over the top and set the pan under the lowest part of the broiler. Cook until the top is set and the crumbs are nicely browned (broilers vary; watch carefully so that the top doesn’t burn.)
Serves 3-4.

An interesting-delicious recipe when there’s leftovers (very usual indeed).
For me the onions aren’t optional can give a very good taste

Very nice, I love breakfast for dinner, so why not dinner for breakfast! This one actually looks like a delicious pasta quiche, thanks for the recipe!
