Fish for Friday: Crab Quiche

Crab Quiche

Ingredients:

1 (9 inch) unbaked pie crust
½ cup mayonnaise
3 eggs (beaten)
1 cup of crab meat (or imitation crab)
1 cup shredded Swiss cheese
½ cup milk
2 tablespoons all-purpose flour
½ cup green onions (chopped)
salt (optional, to your taste)
pepper (optional, to your taste)
cayenne pepper (optional, to your taste)

    I’ve made this and want to say two things:
    One - NEVER use imitation crab…trust me, the REAL thing is worth EVERY penny. Buy American if at all possible. In my case, I buy lump blue crab meat from the Chesapeake. Out west, I’d get King, Snow or Dungeness…and yes, I’d pay MORE to buy American caught/processed.

    Two - it was quite good and easy. I made it for New Year’s Eve for a few guests. They loved it.
